It is NO secret around these parts that I looooove my crockpot(s)!
Serious to the good Lord above, I am not even kidding.
I own three (two large oval and one smaller round) & have been known to have all three of them going at the same time....one main dish & two side dishes.
That's the way a busy mama makes it work sometimes!
When I'm feeding my dad's side of the family, it's almost necessary because I don't have any other pots that are large enough. Four daughters, two are married with two kids each & one has a serious boyfriend....
it takes a LOT of food to feed us all at the same time!
That said, Kelly over at Kelly's Korner Blog is hosting a Crockpotalooza. I'm linking up with her today to show my FAVORITE main dish crockpot recipe. She has sooo many people linked up right now -- I can't WAIT to go check them all out! Hopefully I find some new favorites. :)
Without further ado, here we go!
Crockpot Creamy Italian Chicken
4 boneless, skinless chicken breast halves
1 envelope Italian dressing mix
1/3 cup water
1 package (8 oz.) cream cheese, softened
1 can condensed cream of mushroom soup, undiluted
1 can mushroom stems and peices, drained
Place the chicken breast halves in a slow cooker. Combine salad dressing mix and water; pour over chicken. Cover and cook on low for 3 hours. In a small mixing bowl, whisk together cream cheese and soup until blended. Stir in mushrooms. Pour cream cheese mixture over chicken. Cook 1 to 3 hours longer or until chicken juices run clear.
**I serve this over white or brown rice. I also have used chicken legs/thighs & I have shredded the chicken up before to make sort of a thick sauce type thing. It will feed my family of 4 with leftovers for one lunch the next day.
