puppy love (and a cell phone picture dump)

Sweetest picture ever! These two play so well together and have to be close even when they're sleeping. (And yes, it is a tight squeeze to have two kids in carseats + two 40 pound dogs in a Ford Fusion!)
 
The othe day, we took the girls over to play with the train table at Barnes & Noble.
 I went to change June's diaper & came back to find this. Like father, like daughter!

June loves doing things with her hands. She will sit for quite a bit and try to put her high chair buckle together. I think she's going to grow up & do something with her hands, like her daddy!


Earlier that same day, I found Sara having a tea party with her baby. She was having a good old time!


This is probably my favorite. She won't be this little for long. :(
 
I am so glad we have cell phones! I love being able to whip mine out & take a "Kodak moment" picture. I know ya'll are probably sick of seeing crappy cell phone picture.
I will get a new, REAL, camera very soon, I promise!
 
I hope ya'll have a great day! We don't have a whole lot planned. June has speech therapy this afternoon & then I have a date with the weeds in my flowerbed this evening. Let's hope it's a nice one!

lentil & rice casserole recipe

A while back, I made a lentil & rice casserole for supper. It was SOOO delicious, cheap, and pretty healthy, too! I could not believe how much I liked it. It reminded me of a ground beef & rice casserole. I think I might have mentioned it one day in a blog, but I'm just now getting around to sharing the recipe. Enjoy!

Lentil and Rice Casserole

3 cups broth (I used Wyler's chicken bouillon cubes)


3/4 cup lentils
1/2 cup brown rice (I used white rice & it was fine)

3/4 cup chopped onion


1 tsp. Italian seasoning
1/4 tsp. garlic powder
1 cup grated cheese

Preheat oven to 300 degrees. Mix all ingredietns except cheese in a baking dish. Cover with foil & bake for 1 hour & 10  minutes. Remove foil, add cheese, and bake an additional 20 minutes.


I know it doesn't look like much, but I PROMISE it is good stuff! I served it with a basic salad as a side and it was absolutely delicious. Even my "I need meat at every single meal" husband loved it!

65 years young!


 
On September 3, my uncle Sonny turned 65 years young.


 
Every year that we've had with him is a blessing. You see, about 38 years ago, he was involved in a very terrible car accident. He was trapped in his truck, with the truck on fire, when a friend came to and pulled him from the vehicle. Parts of his feet were burned and he was left paralyzed from the waist down. Obviously, I wasn't born back then -- but in all of my 26 years I have never heard him complain. Ever. He's always thanked God for the accident, because it opened his eyes and made him realized he needed to accept God as his Saviour. And even though he is handicapped -- well, let me just tell you what. You would never know it! He runs a successful florist, he gets on his lawn mower & cuts grass, he piddles around out in his shop, he drives around the property on the Gator, he cooks, and most recently he got stuck in the mud in his motorized wheelchair. But we try not to kid him too much about that one! His grandson and his friend Richard are his "hands". His grandson is the only one I know who was taught how to rebuild motors at 8 & 9 years old!


I didn't meet my dad until I was 17 years old, and my uncle Sonny filled that space in my life for all those years -- and honestly, he's still there. I just made my heart a little bigger for my dad. :) Many times he has prayed with me, sang with me, shared Scripture with me, showed me how to do things. If I tried to pass all of his wisdom and little sayings on, I could never finish it. I love him SO much!



Mr. Gary (standing) is the man who pulled Uncle Sonny from the burning truck.
Friends for life...that share a bond much deeper than most.
He will never know how thankful our family is for his quick thinking that night.



Jared (his grandson) had to take over lighting all 65 candles (told ya'll this was a tradition now!).
He said if we were going to have 65 candles for him to blow out,
he wanted to use a blow dryer!


And use a blow dryer he definitely did! It was hilarious.

Dear Uncle Sonny,

I am so blessed to have you as my uncle. The seconds, minutes, hours, that you spent drilling lessons, values, and morals into my head that you didn't think would ever register, have stuck with me. I will never forget them! The nights that I woke to hear you praying, the countless times I heard you make the same prayer request over and over, the moments when you knew just what to say to make me bring my head up and hold it high...they are all engraved in my mind for the rest of my life. I still remember the way you proudly smiled at my high school graduation when I was giving my speech. I remember the night I flew home from England the day after Junior passed away. I pulled up in the yard and you were first in line (after Jennifer!) to give me a hug. The weeks after that when I slept with Jennifer and the kids in the spare bedroom so she wouldn't have to be alone, just like when we were little. When you teared up when I walked down the aisle. The first time you held my sweet little firstborn, and that early morning phone call when I needed to tell you that June Claire had came early. The hour long conversations we had while she was in the hospital.

If I tried to write down every memory I had of you, well you know we'd be here forever. So let me just say this: you are a one-of-a-kind man, one that my Grandaddy (and God) would be so proud of. We all love you so much and can't wait to celebrate your 66th!

i will never forget

Ten years ago today, I was sitting in a doctors office. I was 16 years old.
I was pretty sick, but I heard someone tell my mom that a plane had crashed into a building in NYC.
That was SO far away from small-town Alabama that I just kind of brushed it off.
Then I heard a collective gasp as the nurses and patients gathered in the waiting room
 watched the second plane fly into the building, live.

I remember thinking how sad it was that all those souls went to meet Jesus and never knew Him.

I remember the day our President declared a war.
 I didn't know anyone in the military at the time, so again....
it seemed so far from home that it didn't really affect us.
But then I met and married a USAF Airman in 2005,
 and I've spent the past six years waiting with bated breath.
 Waiting for that moment that may never come, or may come before you're ready.

Yesterday, my mom & I were having lunch and the TV beside us was tuned to CNN.
They were talking about a second attack that they were trying to stop.
I had to ask the server to turn it.
 My stomach literally fell to my feet and I was holding back tears.
Because now? That war is not far from home. It lives in my house.

I will never forget what happened on September 11, 2001.
 I will never forget the lives that were lost,
the heroes that died trying to do something, anything, to stop the hijackers.
 I will never forget the firefighters, police officers, constrction workers, civilians, etc.
who have aided in relief efforts since that day.
I will never forget the men & women who have participated in the military efforts.

But most of all -- I will never forget the sense of patriotism our country experienced in those months, and how our relationship with God grew stronger.
Oh, how I wish we could get that back.

my friend murphy

Isn't it ironic that when you're going to be alone (i.e. the Air Force sends Daddy away for a couple weeks)....everything goes wrong?

Monday morning I woke up in extreme pain. I had hurt my lower back/tailbone/hip area. Thought I would just wait it out. Didn't sleep at all Monday night & Tuesday morning we were sitting in the ER (thanks to my mama for watching the girls & taking the day off work!). Found out I damaged the tissue/vessels around the base of my spine & they were swollen & inflamed. Figured I would pick up my prescription that included pain meds & all would be well in a few days.

Not.

That was the beginning of a HUGE mess that included the pharmacy not filling my pain meds, me not realizing it until 10 PM, a tearful 4 AM call to the ER during which I was told the first ER doctor never submitted my pain meds to the pharmacy & I had to wait until my PCP's office opened at 7 to get an appointment, then no appointments were available at my PCP's office until 2:30 PM & I was NOT waiting that long to be seen, so I headed over to the local ER -- at which I was told -- after I had been checked in -- that I could not be seen because it wasn't a true emergency. By this time I was bawling my eyes out & could not stand, sit, anything without feeling EXTREME pain (I'm serious ya'll, natural childbirth was easier than that!) so I went back to the Army hospital ER & demanded I get my pain meds. The good Lord was looking out for me (and for everybody staffed at that ER!) and sent a kind doctor who realized I really WAS in extreme pain, to apologize profusely & gave me a NEW prescription for a different medicine because the FIRST? I WAS ALLERGIC TO. Seriously!

When the pharmacy tech handed me that sweet Vicodin, I told her she was my hero. And I meant it with every inch of my being, too! I have never taken pain medicine like that but I tell you what -- I felt immense relief within 45 minutes of taking it. I slept nearly all afternoon, all night, & I took a 4 hour nap with the kids today. Sleep is wonderful, my friends. Especially when you've gone 48 hours with none!

And as that awesome Murphy's Law would have it, Michael left today for a couple of weeks. The girls & I are heading to my parents in the morning because I literally cannot handle it alone. I can't take the pain medicine if I'm alone with them, and if I don't take the pain medicine then I can't care for them because I can't move. It's a lose-lose situation. So my mama, Daddy, and baby sister Allie will be taking care of the three of us for the next few days. :) Good thing they love us & don't mind!

So, yes....that's where I've been since Sunday. 
And I hope & pray to God I never have to feel that pain again!

crockpotalooza!

It is NO secret around these parts that I looooove my crockpot(s)!
Serious to the good Lord above, I am not even kidding.
I own three (two large oval and one smaller round) & have been known to have all three of them going at the same time....one main dish & two side dishes.
That's the way a busy mama makes it work sometimes!
When I'm feeding my dad's side of the family, it's almost necessary because I don't have any other pots that are large enough. Four daughters, two are married with two kids each & one has a serious boyfriend....
it takes a LOT of food to feed us all at the same time!

That said, Kelly over at Kelly's Korner Blog is hosting a Crockpotalooza. I'm linking up with her today to show my FAVORITE main dish crockpot recipe. She has sooo many people linked up right now -- I can't WAIT to go check them all out! Hopefully I find some new favorites. :)

Without further ado, here we go!

Crockpot Creamy Italian Chicken
4 boneless, skinless chicken breast halves
1 envelope Italian dressing mix
1/3 cup water
1 package (8 oz.) cream cheese, softened
1 can condensed cream of mushroom soup, undiluted
1 can mushroom stems and peices, drained
Place the chicken breast halves in a slow cooker. Combine salad dressing mix and water; pour over chicken. Cover and cook on low for 3 hours. In a small mixing bowl, whisk together cream cheese and soup until blended. Stir in mushrooms. Pour cream cheese mixture over chicken. Cook 1 to 3 hours longer or until chicken juices run clear. 
**I serve this over white or brown rice. I also have used chicken legs/thighs & I have shredded the chicken up before to make sort of a thick sauce type thing. It will feed my family of 4 with leftovers for one lunch the next day.
